Recipe for Baked Vegan Doughnuts.
I’m not big on sweets, but when I do get a craving, I almost always want doughnuts. Unfortunately, there is no good place around me that makes good, fresh doughnuts, so I have to make them myself.
Which works better anyway, because they’re cheaper, and I can make them in any way I want!
Baked Vegan Doughnuts
Servings: 7 Large DoughnutsIngredients:
- 1 Cup All-Purpose Flour
- 1/2 Cup Sugar (I used coconut sugar)
- 1 1/2 Teaspoons Baking Powder
- 1/2 Teaspoon Salt
- 1/4 Teaspoon Nutmeg
- 1/2 Teaspoon Cinnamon
- 1/2 Cup Milk (I used almond milk)
- 1/2 Teaspoon Apple Cider Vinegar
- 1/2 Teaspoon Vanilla
- 1 Egg (I made a flax egg: 1 Tablespoon Ground Flax + 3 Tablespoons Water)
- 4 Tablespoons Butter (I used Earth Balance)
- 1/2 Teaspoon Salt
- 2 Teaspoons Pumpkin Pie Spice
- 4 Tablespoons Water
- For frosting (optional): 1 Cup Icing Sugar + 4 Tablespoons Milk + 1/2 Teaspoon Vanilla
Instructions:
- In a large bowl, combine all of the dry ingredients. Set aside.
- In a small saucepan, combine all of the wet ingredients and warm until the butter has melted. Don’t get it too hot!
- Add the wet mixture and the dry mixture together, and form your dough (it will be wet and sticky).
- Preheat oven to 350F and spray your doughnut pan with non-stick spray. Start adding dough to your doughnut pan, making sugar you don’t over or under fill. Fill just below the rim.
- Bake for about 13 minutes, or until a toothpick comes out clean.
- Cool completely before adding any icing.
