Recipe for Baked Vegan Doughnuts.


Baked Vegan Doughnuts



I’m not big on sweets, but when I do get a craving, I almost always want doughnuts. Unfortunately, there is no good place around me that makes good, fresh doughnuts, so I have to make them myself.


Which works better anyway, because they’re cheaper, and I can make them in any way I want!



Baked Vegan Doughnuts





Servings: 7 Large Doughnuts

Ingredients:



  • 1 Cup All-Purpose Flour

  • 1/2 Cup Sugar (I used coconut sugar)

  • 1 1/2 Teaspoons Baking Powder

  • 1/2 Teaspoon Salt

  • 1/4 Teaspoon Nutmeg

  • 1/2 Teaspoon Cinnamon

  • 1/2 Cup Milk (I used almond milk)

  • 1/2 Teaspoon Apple Cider Vinegar

  • 1/2 Teaspoon Vanilla

  • 1 Egg (I made a flax egg: 1 Tablespoon Ground Flax + 3 Tablespoons Water)

  • 4 Tablespoons Butter (I used Earth Balance)

  • 1/2 Teaspoon Salt

  • 2 Teaspoons Pumpkin Pie Spice

  • 4 Tablespoons Water

  • For frosting (optional): 1 Cup Icing Sugar + 4 Tablespoons Milk + 1/2 Teaspoon Vanilla


Instructions:



  1. In a large bowl, combine all of the dry ingredients. Set aside.

  2. In a small saucepan, combine all of the wet ingredients and warm until the butter has melted. Don’t get it too hot!

  3. Add the wet mixture and the dry mixture together, and form your dough (it will be wet and sticky).

  4. Preheat oven to 350F and spray your doughnut pan with non-stick spray. Start adding dough to your doughnut pan, making sugar you don’t over or under fill. Fill just below the rim.

  5. Bake for about 13 minutes, or until a toothpick comes out clean.

  6. Cool completely before adding any icing.
